There are a few great sushi masters who can transform sushi into food for the gods!
Midori-zushi. Among the modest 'sushiyasan' creating traditional sushi along with innovational original dishes, there are many master chefs. They say little, giving their sushi creations their full attention. However (along with the dedicated sushi lovers who on busy days such as national holidays who are prepared to queue for up to two hours (the sushi really is that good!) the atmosphere in all branches of Midori-zushi is relaxed and welcoming.
Presentation
Every individual order is given great consideration as to the type of ceramic dish they are served on. This attention to the presentation of the vast choice of menu gets your taste buds on the alert for the culinary delight you are about to experience. It is not uncommon to hear "oishisou' ("that looks delicious") Once tasted the 'incantation' and together will change into a simple "oishi" ("this really is good!" :)
Another wonderful aspect of Midori-zushi style is that many different varieties of sushi are on the menu. If you thought "maguro" (tuna) is just one type of tuna think again as you peruse the menu for a wide range of both varieties and variation in the preparation and serving. The menu itself is bursting with so many delicious (oishi!) sushi that it would be impossible to eat your way through it in just one sitting.
Although as mentioned above the "honten" (main branch is in Umegaoka but for the tourist the easiest way to enjoy this culinary treat is to go to Shibuya on the Yamanote Line. There are two branches there, addresses as follows:
