Midori Ramen is a local ramen shop in Asakusa that specialises in Saga ramen. Saga prefecture is in Kyushu, the very South of Japan. In Tokyo, Saga ramen is quite an unusual find.

The ramen broth is similar to Hakata tonkotsu broth made from slowly cooked pork. Especially popular at Midori is their ramen and inari sushi set. This "sushi" is rice inside a tofu pouch - rice in a bag. The ramen shop makes it so well that it sells the inari sushi for people to take home.

Midori prepares the ramen with authentic ingredients from Saga prefecture. There is information in Japanese about where the rice comes from, who harvests the seaweed, and who makes noodles and soy sauce used here. From the counter seats you can see how the ingredients are used in the kitchen.

This shop is open until late at night and also perfect for sake or shochu with friends. It is a small place but worth searching for in the back streets of Asakusa.
